I'm trying to set up recording for desktop audio on audacity 3.2.5 and after doing the recording & playing the recording back in audacity, the playback sound is significantly lower than the original desktop sound.

After recording (or if you have an existing file) you can run the amplify or normalize effect to adjust the volume. audacity has pre scanned your file and amplify will default to whatever gain (or attenuation) is required for 0db peaks.
