Winter Spring Csa Week 11 *when we hit the most booming week of tomato yields, we vacuum seal packages of whole tomatoes, and this time of year they are a delicious way to make a simple small batch of sauce or in other recipes that call for a stewed tomato. That’s the comment someone made to us as we planted our first beds of crops outside a couple weeks ago. it’s totally true this spring we are pushing the bounds of what feels reasonable in terms of getting plants in the soil, both inside and outside of our tunnels. One of our most popular csa's is this one, as it is the first pop of plants in spring. this will have a mixture of our favorite blooms, with tulips, our favorite daffodils and ranunculus. we have handpicked the varieties and have been placed into this ground this fall. We’ve got some spring onion pesto with parsley, chives, sautéed fennel stems, green garlic, lemon, sunflower seeds and olive oil. it’s perfect on pasta, roasted potatoes, or protein, or mixed with mayo or sour cream to make a nice dip for crudité.”. This week has been unseasonably cool and very rainy, so we mostly focused on greenhouse work. we have most of our tomatoes trellised, and we should be able to start picking our most mature tomato plants next week.
