The extreme ai is prone to get distracted by buildings, and towers castles in particular. if i'm testing something out against the extreme ai, i avoid building any towers, and build my castles at the back of my base, just so they don't needlessly agro the ai into wasting all its army on them. As well as the other points mentioned already, i've seen the extreme ai be more responsive with line of sight. e.g. if your army gets near its lumberjacks, it will pull them away, whereas the hardest ai, as far as i've seen, only responds once it has actually been attacked.
